The Aimsir Story

Steve and Christine Hopkins have always aimed high.
An engineer by trade, Steve possesses that rare combination of ambition and fearlessness that propels a person to climb Antarctica’s tallest mountain, run marathons, and make world-class whiskey. Christine’s sharp business acumen, keen palate, and commitment to creating inclusive products that welcome seasoned and fledgling drinkers alike have guided Aimsir’s trajectory since its initial launch.

United by a shared love of spirits and a commitment to continually pursing a better way, Steve and Christine’s Aimsir journey began in Portland, Oregon. Their beautifully designed Art Deco inspired tasting room opened in 2020, the same year their daughter Vesper was born.  Together, their family sees Aimsir as a tribute to their family’s Irish heritage, a way to cultivate community, a chance to bring people together, and a brand new frontier for exploration.
